Question: Why did these two cups of dandelion tea turn out to be different colors? Same amount of dried herb, same amount of water. The herbs were from the same source. The tea was prepared in the same way, steeped for the same amount of time. What’s different about the tea on the left?

Answer: The tea on the right (lighter color) is an infusion. I poured boiling water over the herbs and let it steep overnight.  The tea on the left (darker color) is a decoction. I simmered the herbs at a low boil on the stove for about twenty minutes, and then let it steep overnight.  Not all herbs are stronger as a decoction, but some are. Generally roots and barks are prepared as a decoction, while leaves and flowers are prepared as an infusion. 

Knowing whether or not to decoct your herbs will help you make the most potent herbal remedies. Many herbs will not make a potent remedy as an infusion but will be very strong as a decoction.
